What is utskho-suneli? It is believed that utskho-suneli is a plant from the genus fenugreek that blooms with blue and blue flowers, i.e. Fenugreek Blue. Dried seeds are visually different from those of ordinary hay fenugreek, although their taste is somewhat similar, but the aroma is softer, and the taste is not so bitter. In Eastern Europe, it is often used in the manufacture of cheeses, baking bread and baked goods. The seasoning can be used in first and second courses for flavoring and piquancy. Suitable for baking pita bread, rich pies with meat or vegetable filling, roasts, gravy and sauces, barbecue marinades, kharcho and other hot dishes.
