Food additive E262 is represented by two compounds: E262 (i) sodium acetate; E262(ii) sodium diacetate. One of them is a normal sodium salt of acetic acid, and the second is an associate consisting of sodium acetate and free acetic acid. In the food industry, this additive is valued primarily for its ability to regulate the level of acidity of the environment, to act as an excellent preservative, flavoring and stabilizer. The functional responsibilities of the E262 food additive are the preservation of taste and aroma characteristics, shape and texture, as well as improving the consistency of products. Consequently, there are a number of products, the production of which today is practically indispensable without it. Additive E262 is used in canning fruits and vegetables to soften the taste of acetic acid. Also, the E262 additive is used as a flavoring agent in the production of chips, giving the product a slightly vinegary taste and aroma.
